What are the best tomatoes to use for making salsa?

Posted on Mar 20, 2010 under Best Tomatoes | 5 Comments

I’m going to start my garden soon and I want to grow a salsa garden. But I need to know what type of tomatoes to grow.

Romas & tomatillos.

What would tomatoes grow best in?

Romas. They’re relatively dry so you don’t get watery salsa.

There are a few, and I highly recommend growing a variety … any tomato with a nice meaty and dry flesh is excellent for salsa (blends produce some of the best salsa!). I also love to incorporate the less acidic tomatoes, such as the yellows and oranges. We are big salsa/tomato lovers, and our preferred garden tomatoes for salsa are:

Rio Grande Tomatos a/k/a Pomodoro Rio – similar in shape to the Roma
    Romas a/k/a Paste Tomatoes
    Sungold
    Beefsteak
    Better Boy
    Lemon Boy
    Yellow Pear
    Heirlooms
    Etc.!!!

A mix of the varieties (both acidic/rich and sweet) produce amazing flavors! Of course, much depends upon what zone you life in … here I must buy plants, as our growing season is extremely short. Do not forget to plant a few cilantro seeds/plants (if you like cilantro), as well as onions and garlic if you like and have space.

    Hope this helps ;)

Usual summer garden consists of 12-16 varieties of tomatoes, and several varieties of peppers ;)
