Best way to clean vegetables without cooking them?

Posted on May 28, 2009 under Best Vegetables | 7 Comments

I recently purchased a juicer and am wondering what's the best way to clean green vegetables like broccoli and asparagus for juicing? I feel that simply rinsing them with cold water isn't enough. Obviously, since they're being juiced, they're not being boiled or steamed either.

soak in a water vinegar solution, wash them, use a vegetable brush if possible.

who knows maki the best!! yamapi or kame

Rinse thoroughly and put into a vegetable spinner. It will throw off the water and and remaining dirt and grit.

The use of vinegar will taint the taste and start a pickling process

They make a solution for that, but I just scrub them well under cold water.

Cooking does not "clean" vegetables – it breaks down the fiber and cell walls to make the vegetables more digestible, but at the sacrifice of some vitamins which are destroyed by the heat. Depending on the cooking method, some water soluble nutrients are also lost into the discarded water. Your feeling that "rinsing with cold water is not enough" is misplaced. There is no other method to remove the remaining contaminants left after farming and commercial washing for retail sale. If anything else is left, there will be no way at all to get it off, but FDA and USDA regulations prohibit harvesting fresh food that has contaminants that cannot be washed off, and prohibit using persistent types of pesticides and fertilizers on food to be sold as fresh.

Juicing is a foolish way to eat fruits and vegetables, because one of the principle benefits from eating them is the fiber, which is discarded in juicing. Why are you doing this at all?
