Roasted Chicken & Vegetables

Roast Drumsticks & Vegetables
8 chicken drumsticks (2-1/4 lbs)
1-1/2 lb. all purpose potatoes, scrubbed and quartered
1 lb. carrots, cut in 2 in. pieces
2 lb. butternut squash, peeled, seeded and cut in 1-in wide slices
2 medium onions, each cut into 8 wedges
5 cloves garlic, halved
2 Tbsp. oil
1 Tbsp. Italian herb seasoning
1-1/2 tsp. salt
1 tsp. freshly ground pepper
Position racks to divide oven in thirds. Heat to 425 degrees. Have 2 rimmed baking sheets ready.
Put all ingredients in a large bowl; stir to mix and coat. Arrange in a single layer on both baking sheets.
Roast, switching position of pans and turning vegetables halfway through roasting, 45 minutes or until chicken is cooked through and vegetables are tender.

ooh i found a cooking one i hadnt seen of yours! yeah i love making quick roasts sometimes i do this with lamb chops and seasoning too. love baked vegies. I also liked baked potato in foil! yum sweet potato! i do lemon an oregano or itallian herbs on chicken for hubby and me which is yum. yours looks good!

If you want to go …
If you want to go truly low fat, I say you should probably use breast tenderloins. It will cut out all the fat that you would find in the drumsticks. Then perhaps half the olive oil. Just make sure some gets on there, since it will help during the roasting.

Pat is on a low fat, low sodium diet, but this isn’t bad, do you think? I could do this one for him, huh? Plus, I could even cut your half into half - or just use 3 drumsticks or thighs… Maybe I could do this, if I leave out the salt.
