What is the best substitute for vegetables and fruits if fresh produce is not available?
Posted on Jun 04, 2009 under Best Vegetables | 3 CommentsI want to get all the vitimins and minerals of fresh produce, but I do not always have it with me at my house or workplace when I am hungry? Are there any other foods or drinks that best substitute for real vegetables or fruits?
Frozen vegetables retain more nutrients than canned. I'm not sure where dried vegetables come on the list, but some of their nutrients are lost during the blanching process before drying. I imagine they are better than canned, though. Freeze-dried might be better still, as there is not as much heat applied in that process, so nutrients would not break down as much.

They don't have to always be fresh. You can get canned, frozen or dried. Juice counts as 1 portion in the 5-a-day fruit and veg list. Smoothies are also pretty good.
