What is the best way to preserve vegetables?

Vegetables in Chinatown are really cheap, but they don’t stay fresh for very long. Can I freeze them at home but still retain most of their nutritional value?

Or are there better ways of keeping them fresh?

Blanching & flash freezing will work for preserving many hardier vegetables.
But those with high water content, like bean sprouts & bok choy, will rupture & go brown.
I freeze quartered tomatoes & peppers, but only to use in spaghetti sauces.
