What vegetables are best for a dwarf hamster?

The vet has advised me to not feed him any of the usual seed mix that I give him, because he will have trouble grabbing them. She told me to feed him fruits and vegetables until he’s better.
Any recommendations from other dwarf hamster owners out there as to what fruits and vegies are best for him, or what your hamsters like the best?
Avoid fruits or vegetables with a high water content such as watermelon or lettuce. You should also avoid celery because it has a high sodium content. You can feed your hamster:
Cucumber
Carrots
Broccoli
Peas
Corn
Zucchini
Asparagus
Spinach
Greenbeans
Apples
Strawberries
Bananas
Seedless grapes
Blueberries
Peach
Your hamster can also eat small amounts of cooked pasta, cheese, egg, turkey, chicken, or beef without the grease. Just be careful using large amounts of fruit or vegetables because it can give your hamster diarrhea.

What is the best way to cook vegetables without losing any of the nutritional content?

You could wedge a carrot between the bars of the cage not to high so he has to use his hands to lean up against it, he could just sit there and chew at it. Or get a chew stick from a pet shop but this wont feed him completely.

fruits and vegetables should be fed moderately and not excessively. Good vegetables for hamsters are: a small piece of chicory, endive, carrot, cauliflower, paprika, cucumber and broccoli. Good fruits for hamsters are: a small piece of apple, pear, peach, melon, berries amd banana. Make sure you remove any uneaten fruit as they will start to rot which could make your hamster ill.
Green Vegetables: Green vegetables are another favorite treat of hamsters. Feeding a small slice of cucumber (which is also good source of water) or a piece of lettuce from time to time will be appreciated. But be careful not to overdo it. These should not be fed more than once every 2 or 3 days. In the case of lettuce, too much can cause liver problems in hamsters so feed this treat sparingly.
