Whats the best way to roast Vegetables?
Posted on Jul 06, 2009 under Best Vegetables | 12 CommentsI am cooking Roasted Vegetables tonight and want to know what the best way to roast them is.. i know the obvious answer is in oil in the oven, but i want them to taste fantastic! i love roast carrots but when ever i do them they just taste like carrot! and not sweet and caramelly if you know what i mean… any advice or ingredients would be appreciated. thank you.
also how much oil should i use?
Please, please, please do not boil your vegetables before roasting them.
I know we are British, and our mothers gave us boiled steak ( step 1. put steak in the pan, step 2. turn on the ring), but it’s time to move on.
Just season with sea salt and a drizzle of olive oil, then roast in pre-heated oven.
It is so very much better, and the world will stop laughing at our cooking.

I par boil mine first, then allow them to cool, then I heat olive oil in the roaster dish first, then add the chosen veg of your choice, then sprinkle over garlic salt for a really lovely flavor!

A bit of Goose fat to roast your veg in makes them taste lovely particularly roast potatoes.

I roast all of my veg in a 375 degree oven
Clean and trim and cut (as desired) and scatter on a rimmed baking sheet. Drizzle lightly with vegetable oil (I use safflower oil for all of my cooking and baking) and then seasoned liberally with kosher salt. Roast 9 to 11 minutes tossing the veg half way through the cooking time.
Once the veg are roasted, I sometimes like to scrap them into a bowl and drizzle them with balsamic vinegar. After roasting is when I grind on freshly ground black pepper.

If you want to make them caramelized, add some brown sugar and butter.

im always BBQ mushrooms and peppers its Deliciouss but you also boil them in hot water well actually depends on what kind of vegetables they are, you can put most ofvegetables in the oven.
that’s all i know.
if you put vegetables like i dont know carrots in boil water you don’t need to put oil even in oven

Soak in a mixture of red wine and worcestershire sauce, then brush with oil and add seasoning in roasting pan

Here’s a popular New Zealand recipe for roasted veggie medley
1/3 cup olive oil
3 cloves of garlic minced or pressed
2 Tbsp chopped fresh rosemary
6 sage leaves chopped
1 Tbsp fresh fennel leaves
Salt and pepper to taste
1 lg onion
1 medium aubergine
1 sweet red pepper
1 sweet green pepper
1 medium courgette
2 lg tomatoes
1 medium yellow summer squash
Cut all veggies into sticks the same size. Whisk oil with herbs and garlic. Drizzle over veggies and toss. Roast in preheated oven at 175 degrees C. for 30-40 minutes, uncovered, turning once or twice.

I like to put together, sweet potato, carrots and Butternut Squash, srub n chop, mix together with olive oil, balsamic vinegar, salt, pepper and a couple of un peeled garlic cloves.
Roast in the hot oven till done.
Another way is to roast carrots whilst mixing honey, mustard and butter in a pan, when carrots are done pour the glaze over then return to oven for 5 more mins to allow to go sticky, then serve, kids love it

ok right for a fantastic taste, good 2 tablesppons of olive extra virgin olive oil, then chuck in 2-3 cloves of garlic cut in half, roast for 5 mins or so, then all the other veg, toss this in, gas make 7 or 200 c, checking and turning a couple of times.
last thing, some herbs 5 mins befor end, couple of teaspoons of dry herbs if none fresh.
mixture of parsley, basil, oregano and this will taste great.
you can mix butter half and half with the oil for extra taste.
